Maison Simonnet Febvre is one of the most traditional in Chablis. Founded in 1840, during the heyday of the very fashionable "Chablis Mousseux", the Maison remains the only producer of sparkling wine in Chablis. Now days, Maison Simonnet-Febvre is dedicated to improved wine-making and selling the finest quality wines from a substantial portfolio of wines stretching across Chablis.
The Maison is managed today by Jean-Philippe Archambaud, who took knowledge of New World wines from Australia where he resided for five years. Simonnet-Febvre vinifies a large range of reputable wines derived from four appellations: Petit Chablis, Chablis, Premiers Crus and Grand Crus. The Maison has above all chosen to respect the regional tradition of not attempting to imitate the whites of the Côte de Beaune, favouring wines with freshness and elegance.
